Zucchini Pizza Bites

About this recipe:

A quick and low carb version of homemade pizza.

Ingredients:
  • 2 zucchinis
  • 4 sprays cooking spray
  • ½ cup tomato pasta sauce
  • 1 ¾ tsp italian seasoning
  • 2 cups shredded italian cheese blend
Instructions:
  1. Preheat oven broiler. Line a baking sheet with foil.
  2. Slice zucchini into 1/2-inch rounds. Spray both sides with cooking spray and place on a foil-lined baking sheet. Sprinkle with salt and pepper. Broil 2 minutes, then flip and broil another 2 minutes.
  3. Remove pan from oven. Spread tomato sauce on each slice, then sprinkle with italian seasoning and cheese. Broil an additional 2 to 3 minutes, until cheese is melted.
  4. Cool slightly and enjoy!
