Tomato Basil Cottage Cheese Bowl

About this recipe:

A savory and fast breakfast loaded with protein and full of fresh, summer flavors.

Ingredients:
  • 3 cups cherry tomatoes
  • 1/2 cup fresh basil
  • 5 cups cottage cheese
  • 1/4 cup pine nuts
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
How to cut basil:

To cut basil into thin slices, stack several leaves into a pile. Roll the stack into a tight tube. Carefully slice the roll horizontally to your desired thickness until the entire roll is sliced. You can then dice the strips further, if needed.

Instructions:
  1. Cut the cherry tomotoes into quarters. Set aside.
  2. Finely chop or tear basil into small pieces. Set aside.
  3. Add cottage cheese to a bowl and then top it with the cherry tomatoes, pine nuts, and basil.
  4. Drizzle with balsamic vinegar and olive oil, and serve.
  5. Optional: Add ground pepper to taste.
