Sweet Potato Avocado "Toast"

- 4 sweet potatoes
- 2 avocados
- 1 lemon

Instructions:
- Cut sweet potato lengthwise into 1/4-inch thick slabs. Place in a toaster (or air fryer); run through the toast cycle on darkest setting, or until softened.
- Meanwhile, peel and thinly slice avocado. Zest 1 tsp lemon zest, then cut lemon into wedges.
- Layer avocado slices on sweet potato slabs; sprinkle with salt and lemon zest. Squeeze with lemon wedge before enjoying.
