Spinach and Egg Protein Bowls

About this recipe:
A low carb, high protein breakfast option.
Ingredients:
- 1 yellow onion
- 2 tbsp olive oil
- 1 ½ tbsp minced garlic
- 12 oz ground beef
- ¾ tsp dried oregano
- 1 ½ tbsp worcestershire sauce
- 12 oz frozen spinach
- 8 eggs
Low fat option :
If you're looking for a lower fat option, just switch out the ground beef for ground turkey or chicken.
Instructions:
- Peel and dice onion. Heat olive oil in a skillet over medium heat. Add onion and garlic and cook 3 minutes, until softened.
- Add ground beef, dried oregano and worcestershire sauce. Cook, breaking up the meat with a wooden spoon, until cooked through, about 7 minutes.
- Add frozen spinach and cook, stirring, until heated through, about 5 minutes.
- In a small bowl, whisk eggs until even in color. Push beef mixture to the side of the pan, and add the egg to the other side. Cook, stirring slowly, until eggs have set, then mix into the beef mixture. Season with salt and pepper to taste.
