Simple Keto Breakfast Bowl

A savory, high protein breakfast option ready in 15 minutes.

Ingredients:
  • 8 bacon strips
  • 1 cup radish
  • 2 avocados
  • 4 hard-boiled eggs
  • 2 cups mixed greens
  • 1 ½ tbsp olive oil
  • 1 ½ tbsp apple cider vinegar
Boiling your hard-boiled egg:

You will need to make your hard-boiled eggs before creating your breakfast bowl. It is recommended you cook your egg in boiling water for 7-13 minutes depending on how runny you like your eggs.

Instructions:
  1. In a small skillet over medium-high heat, cook bacon until crispy. Remove to a plate lined with paper towels to cool.
  2. Thinly slice radish and avocado. Cut hard-boiled egg into quarters.
  3. Place mixed greens in a serving bowl and arrange radish, avocado and hard-boiled egg on top. Crumble bacon and add to the bowl.
  4. Drizzle olive oil and apple cider vinegar over everything and season with salt and pepper to taste. Enjoy!
