Simple Keto Breakfast Bowl

About this recipe:
A savory, high protein breakfast option ready in 15 minutes.
Ingredients:
- 8 bacon strips
- 1 cup radish
- 2 avocados
- 4 hard-boiled eggs
- 2 cups mixed greens
- 1 ½ tbsp olive oil
- 1 ½ tbsp apple cider vinegar
Boiling your hard-boiled egg:
You will need to make your hard-boiled eggs before creating your breakfast bowl. It is recommended you cook your egg in boiling water for 7-13 minutes depending on how runny you like your eggs.
Instructions:
- In a small skillet over medium-high heat, cook bacon until crispy. Remove to a plate lined with paper towels to cool.
- Thinly slice radish and avocado. Cut hard-boiled egg into quarters.
- Place mixed greens in a serving bowl and arrange radish, avocado and hard-boiled egg on top. Crumble bacon and add to the bowl.
- Drizzle olive oil and apple cider vinegar over everything and season with salt and pepper to taste. Enjoy!
