Salmon Zucchini Skewers with Cucumber Dill Sauce

A quick and delicious way to make salmon for lunch.

Ingredients:
  • 1 ½ lbs salmon (6 oz, 6 oz, 6 oz, 6 oz portions)
  • 2 zucchinis
  • 2 lemons
  • ¼ cup olive oil
  • 1 ½ tbsp maple syrup
  • 1 tbsp italian seasoning
  • ½ cucumber
  • 3 ½ tbsp fresh dill
  • 1 ½ tbsp fresh mint
  • 2 tsp minced garlic
  • 1 cup greek yogurt
  • 4 cups arugula
Instructions:
  1. Place rack in upper third of oven. Preheat broiler. Cut salmon into 2-inch chunks; season on all sides with salt. Slice zucchini into 1/2-inch-thick coins. Thinly slice half the lemon; juice remaining lemon.
  2. Thread skewers with salmon, zucchini and lemon slices. Place on a foil-lined baking sheet.
  3. In a small bowl, whisk together 4 tbsp lemon juice, olive oil, maple syrup, italian seasoning and a pinch of salt and pepper. Brush over salmon skewers. Cook skewers 8 minutes in preheated oven.
  4. Meanwhile, dice cucumber. Mince dill and mint. In a small bowl, combine garlic, cucumber, dill, mint and greek yogurt. Season with salt and pepper to taste.
  5. Serve salmon skewers on a bed of arugula with cucumber dipping sauce.
