Salmon with Apple-Walnut Crust and Roasted Broccolini

About this recipe:
The apple-walnut crust gives this recipe a delicious crunch.
Ingredients:
- 1 ½ tbsp smoked paprika
- 2 tbsp olive oil
- 1 ½ lbs salmon (6 oz, 6 oz, 6 oz, 6 oz portions)
- 1 ½ lbs broccolini
- 1 apple
- ½ cup fresh parsley
- ½ cup walnuts
- ¼ cup tomato pesto
- 1 ½ tbsp honey
Tomato pesto :
Buy a jar of tomato pesto at your groccery store or make your own!
Instructions:
- Preheat oven to 400° F (204° C).
- Mix smoked paprika and half the olive oil together. Rub spice mixture onto salmon.
- Wash broccolini and pat dry. Toss in remaining olive oil and salt to taste.
- Place salmon on a foil-covered baking sheet and sprinkle with salt. Place broccolini beside. Bake 7 minutes.
- Meanwhile, core and dice apple. Chop parsley and walnuts. Mix apple, parsley, walnuts, tomato pesto and honey in a small bowl.
- When salmon has baked 7 minutes, remove from oven and spread apple mixture on top. Return pan with salmon and broccolini to oven and cook 7 minutes more, or until fish is flaky and opaque.
