Salmon with Apple-Walnut Crust and Roasted Broccolini

The apple-walnut crust gives this recipe a delicious crunch.

Ingredients:
  • 1 ½ tbsp smoked paprika
  • 2 tbsp olive oil
  • 1 ½ lbs salmon (6 oz, 6 oz, 6 oz, 6 oz portions)
  • 1 ½ lbs broccolini
  • 1 apple
  • ½ cup fresh parsley
  • ½ cup walnuts
  • ¼ cup tomato pesto
  • 1 ½ tbsp honey
Tomato pesto :

Buy a jar of tomato pesto at your groccery store or make your own!

Instructions:
  1. Preheat oven to 400° F (204° C).
  2. Mix smoked paprika and half the olive oil together. Rub spice mixture onto salmon.
  3. Wash broccolini and pat dry. Toss in remaining olive oil and salt to taste.
  4. Place salmon on a foil-covered baking sheet and sprinkle with salt. Place broccolini beside. Bake 7 minutes.
  5. Meanwhile, core and dice apple. Chop parsley and walnuts. Mix apple, parsley, walnuts, tomato pesto and honey in a small bowl.
  6. When salmon has baked 7 minutes, remove from oven and spread apple mixture on top. Return pan with salmon and broccolini to oven and cook 7 minutes more, or until fish is flaky and opaque.
