Quick Keto Mug Omelets

The perfect quick and keto-friendly breakfast option.
Ingredients:
- 4 sprays cooking spray
- ½ red onion
- 2 oz ham
- ½ red bell pepper
- 1 ½ tbsp fresh chives
- 8 eggs
- ½ cup cream
- 1 ⅓ cups shredded cheddar cheese
Instructions:
- Grease 4 large microwave-safe mug(s) or pint-sized mason jar(s) with cooking spray. Finely chop onion, ham and red bell pepper. Finely chop chives and set aside.
- Crack eggs directly into mug or jar and add cream, shredded cheddar, onion, ham, red bell pepper and a pinch of salt and pepper. Whisk lightly with a fork until well combined (if making multiple servings, use 2 eggs per mug and divide other ingredients evenly).
- Microwave on low power for 4 minutes, checking often until eggs are firm. Top with chives to serve.
