Mediterranean Tossed Salad with Feta (Keto)

A delicious and keto-friendly lunch idea, ready in just 10 minutes.
Ingredients:
- 1 cup edamame
- ½ red onion
- ¼ cup sun-dried tomatoes
- ½ cup black olives
- 8 cups arugula
- ½ cup olive oil
- 2 tbsp red wine vinegar
- ¾ tsp dried oregano
- 1 cup feta
How to pack for lunch :
If you're packing lunch, pack the dressing separately in a small sealed container. You can also pack your salad in a sealed jar, with the dressing at the bottom. Just shake when you're ready for lunch!
Instructions:
- Prepare edamame according to package directions. Drain and set aside.
- Meanwhile, slice red onion and sun-dried tomatoes into thin strips. Halve black olives.
- Place edamame, red onion, sun-dried tomatoes, black olives and arugula in a large bowl.
- In a separate small bowl, whisk together olive oil, red wine vinegar, dried oregano and a few pinches salt and pepper.
- Add dressing to veggies in large mixing bowl. Toss to coat. Top with feta.
