Mediterranean Tossed Salad with Feta (Keto)

Ingredients:
  • 1 cup edamame
  • ½ red onion
  • ¼ cup sun-dried tomatoes
  • ½ cup black olives
  • 8 cups arugula
  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • ¾ tsp dried oregano
  • 1 cup feta
How to pack for lunch :

If you're packing lunch, pack the dressing separately in a small sealed container. You can also pack your salad in a sealed jar, with the dressing at the bottom. Just shake when you're ready for lunch!

Instructions:
  1. Prepare edamame according to package directions. Drain and set aside.
  2. Meanwhile, slice red onion and sun-dried tomatoes into thin strips. Halve black olives.
  3. Place edamame, red onion, sun-dried tomatoes, black olives and arugula in a large bowl.
  4. In a separate small bowl, whisk together olive oil, red wine vinegar, dried oregano and a few pinches salt and pepper.
  5. Add dressing to veggies in large mixing bowl. Toss to coat. Top with feta.
