Matcha Superfood Energy Bites

These nutritious and delicious energy bites are the perfect midday snack.

Ingredients:
  • ½ cup pecans
  • 1 cup unsweetened shredded coconut
  • 1 tbsp coconut oil
  • 6 pitted dates
  • 1 tbsp matcha powder
  • 2 tbsp protein powder
Choosing your protein powder:

Protein powders come in lots of varities with many different ingredients, so be sure to select one that fits your specific dietary preferences.

Instructions:
  1. In a food processor or high powered blender, pulse pecans until finely ground (the texture of cornmeal).
  2. Add shredded coconut, coconut oil, dates, matcha powder and protein powder. Pulse until well combined into a sticky dough.
  3. Divide mixture into 8 equal portions and roll into balls.
  4. Enjoy one ball per serving. Extra servings can be individually wrapped or stored in an airtight container in the fridge up to 1 week, or frozen up to 3 months.
