Matcha Superfood Energy Bites

These nutritious and delicious energy bites are the perfect midday snack.
Ingredients:
- ½ cup pecans
- 1 cup unsweetened shredded coconut
- 1 tbsp coconut oil
- 6 pitted dates
- 1 tbsp matcha powder
- 2 tbsp protein powder
Choosing your protein powder:
Protein powders come in lots of varities with many different ingredients, so be sure to select one that fits your specific dietary preferences.
Instructions:
- In a food processor or high powered blender, pulse pecans until finely ground (the texture of cornmeal).
- Add shredded coconut, coconut oil, dates, matcha powder and protein powder. Pulse until well combined into a sticky dough.
- Divide mixture into 8 equal portions and roll into balls.
- Enjoy one ball per serving. Extra servings can be individually wrapped or stored in an airtight container in the fridge up to 1 week, or frozen up to 3 months.
