Keto Strawberry Shortcakes

Ingredients:
- 2 sprays cooking spray
- 3 eggs
- ¼ cup cream cheese
- ½ tsp vanilla
- ¼ tsp baking powder
- 2 tbsp erythritol
- 1 cup cream
- 1 ½ cups strawberries
Instructions:
- Preheat oven to 300° F (149° C). Line a baking sheet with parchment; grease the parchment with cooking spray. Separate egg whites and yolks into separate bowls.
- Using an electric mixer, beat egg whites until light and fluffy.
- To the bowl with the egg yolks, add cream cheese, vanilla, baking powder and erythritol. Beat until smooth. Gently fold egg whites into the yolk mixture with a spatula.
- Spread mixture on the prepared baking sheet. Bake 25 to 30 minutes, or until cake puffs up and is golden. Let cool.
- While cake cooks, add heavy cream to a clean bowl. Beat with the electric mixer until soft peaks form.
- Cut cake into 8 squares. Slice strawberries. Top cake with some strawberries and whipped cream.
