Kale, Mushroom, and Walnut Hash

Ingredients:
  • 1 yellow onion
  • 4 cups white mushrooms, pre-sliced
  • 8 cups kale
  • 1 ½ tbsp olive oil
  • ¾ tsp dried thyme
  • 1 ½ tbsp balsamic vinegar
  • 4 eggs
  • ½ cup walnuts
Instructions:
  1. Peel and dice onion. Slice white mushrooms. Remove tough ribs and stems from kale and slice leaves crosswise into ribbons.
  2. Heat olive oil in a skillet over medium heat. When hot, add onion and a pinch of salt. Cook 5 minutes, then add white mushrooms. Cook 5 minutes more.
  3. Add dried thyme to the skillet; toast 1 minute. Then add kale and the balsamic. Cook 2 minutes, or until kale is wilted. Season with salt and pepper.
  4. Make several wells in the center of the vegetable mixture and crack egg into the center of each. Cook 5 minutes, or until white is set but yolk is still wobbly. Season with salt and pepper and sprinkle with walnuts. Enjoy!
