Kale, Mushroom, and Walnut Hash

Ingredients:
- 1 yellow onion
- 4 cups white mushrooms, pre-sliced
- 8 cups kale
- 1 ½ tbsp olive oil
- ¾ tsp dried thyme
- 1 ½ tbsp balsamic vinegar
- 4 eggs
- ½ cup walnuts
Instructions:
- Peel and dice onion. Slice white mushrooms. Remove tough ribs and stems from kale and slice leaves crosswise into ribbons.
- Heat olive oil in a skillet over medium heat. When hot, add onion and a pinch of salt. Cook 5 minutes, then add white mushrooms. Cook 5 minutes more.
- Add dried thyme to the skillet; toast 1 minute. Then add kale and the balsamic. Cook 2 minutes, or until kale is wilted. Season with salt and pepper.
- Make several wells in the center of the vegetable mixture and crack egg into the center of each. Cook 5 minutes, or until white is set but yolk is still wobbly. Season with salt and pepper and sprinkle with walnuts. Enjoy!
