A fast and flavorful low-carb breakfast

  • 1/2 yellow onion, diced
  • 1/2 fennel bulb, diced
  • 1/4 cup olive oil
  • 1 3/4 tsp garam masala
  • 1 lb extra firm tofu
  • 3 1/2 tbsp fresh cilantro
  • 1/2 cup pistachios
Cilantro swap:

If you aren't a fan of cilantro, you can replace it with another leafy herb, like basil or parsley.

  1. Heat the olive oil in a skillet over medium-high heat. Add garam masala and toast it for 30 seconds.
  2. Add onion and fennel to the oil mixture, stirring about 3 minutes until until softened.
  3. Add tofu to the pan, stirring to break up the tofu and mix it with the other ingredients. Cook for 3 minutes until the tofu is slightly browned.
  4. Remove from heat and stir in the cilantro and pistachios.
