Creamy chickpea salad with apples and pecans

This simple lunchtime meal has 12 grams of fiber, which will help you feel fuller for longer.
Ingredients:
- 3 cups low sodium canned chickpeas
- 1 apple
- 2 sticks celery
- 1/2 cup pecans
- 1 1/2 tbsp fresh dill
- 4 green onions
- 2 lemons
- 1/4 cup mayonnaise
- 4 cups spinach
Instructions:
- Drain and rinse chickpeas. Transfer to large bowl and lightly mash with a fork.
- Chop apple and celery into 1/4-inch dice. Add to bowl. Coarsely chop pecans, dill and green onions. Add to bowl.
- Juice lemon. Add 4 tbsp lemon juice to the bowl.
- Add mayonnaise and stir to combine. Season with salt and pepper to taste.
- Arrange spinach on each plate. Top with chickpea salad and enjoy!
