Creamy chickpea salad with apples and pecans

About this recipe:

This simple lunchtime meal has 12 grams of fiber, which will help you feel fuller for longer.

Ingredients:
  • 3 cups low sodium canned chickpeas
  • 1 apple
  • 2 sticks celery
  • 1/2 cup pecans
  • 1 1/2 tbsp fresh dill
  • 4 green onions
  • 2 lemons
  • 1/4 cup mayonnaise
  • 4 cups spinach
Instructions:
  1. Drain and rinse chickpeas. Transfer to large bowl and lightly mash with a fork.
  2. Chop apple and celery into 1/4-inch dice. Add to bowl. Coarsely chop pecans, dill and green onions. Add to bowl.
  3. Juice lemon. Add 4 tbsp lemon juice to the bowl.
  4. Add mayonnaise and stir to combine. Season with salt and pepper to taste.
  5. Arrange spinach on each plate. Top with chickpea salad and enjoy!
