Blueberry Chia Pudding

This filling and delicious breakfast recipe is packed with nutrients and ready in just 20 minutes.

Ingredients:
  • ¾ cup blueberries
  • ¾ cup cashew milk
  • 1 ½ tsp vanilla
  • 1 ¼ tsp cinnamon
  • 3 tbsp hemp seeds
  • 1 tbsp erythritol
  • ½ cup chia seeds
  • 3 tbsp sliced almonds
  • ¼ cup coconut cream
Milk alternatives :

You can use any milk option you like in this recipe. In addition to cashew milk, regular, oat, and almond milk work as well.

Instructions:
  1. In a blender, combine blueberries (reserve a few berries for topping if desired), cashew milk, vanilla, cinnamon, hemp seeds and erythritol (adjust to taste). Blend until smooth.
  2. Transfer mixture to a bowl or jar and stir in chia seeds. Let rest 15 minutes, mixing once or twice, until thickened.
  3. Top with sliced almonds, reserved blueberries, and a dollop of coconut cream. Enjoy!
