Blueberry Chia Pudding

This filling and delicious breakfast recipe is packed with nutrients and ready in just 20 minutes.
Ingredients:
- ¾ cup blueberries
- ¾ cup cashew milk
- 1 ½ tsp vanilla
- 1 ¼ tsp cinnamon
- 3 tbsp hemp seeds
- 1 tbsp erythritol
- ½ cup chia seeds
- 3 tbsp sliced almonds
- ¼ cup coconut cream
Milk alternatives :
You can use any milk option you like in this recipe. In addition to cashew milk, regular, oat, and almond milk work as well.
Instructions:
- In a blender, combine blueberries (reserve a few berries for topping if desired), cashew milk, vanilla, cinnamon, hemp seeds and erythritol (adjust to taste). Blend until smooth.
- Transfer mixture to a bowl or jar and stir in chia seeds. Let rest 15 minutes, mixing once or twice, until thickened.
- Top with sliced almonds, reserved blueberries, and a dollop of coconut cream. Enjoy!
