Banana Coconut Quinoa Porridge

A nutritious and tropical breakfast option that will keep you full.
Ingredients:
- 1 ⅓ cups canned coconut milk (lite)
- 1 ⅓ cups dry quinoa
- 2 bananas
- 1 cup rolled oats
- ¾ tsp cinnamon
- 1 tsp vanilla
Instructions:
- Stir coconut milk, 1 ⅓ cup water and the quinoa together in saucepan. Bring to a boil over medium-high heat. Cover, reduce heat to low and simmer 5 minutes.
- Meanwhile, peel and slice banana.
- Stir banana, rolled oats and cinnamon into the quinoa mixture. Add a pinch of salt if desired. Cook, stirring frequently, 5 to 10 minutes, or until quinoa has softened and mixture is thick.
- Remove from heat and stir in vanilla.
