Banana Chia Overnight Oatmeal

A naturally sweet and nutritious way to start your morning.
Ingredients:
- 2 bananas
- ¼ cup chia seeds
- 1 ⅓ cups rolled oats
- ¾ tsp cinnamon
- 2 ⅔ cups almond milk
- ½ cup pumpkin seeds
- ¼ cup dried cranberries
Instructions:
- The night before: Peel and mash banana in a medium bowl. Stir in chia seeds, rolled oats, cinnamon, almond milk and 1 ⅓ cup water. Mix until well combined. Cover and refrigerate overnight.
- At breakfast time: Place bowl in microwave and heat 1 minute on high. Stir, then continue heating at 30 second intervals until oatmeal reaches desired temperature. (Alternatively, heat in a pot on the stove, stirring frequently, about 3 minutes.)
- Sprinkle with pumpkin seeds and dried cranberries. Enjoy!
