Sometimes referred to as miracle or konjac noodles, Shirataki are made from glucomannan, a type of fiber that’s derived from the root of the konjac plant.
Glucomannan is high in viscous fiber, which can hold onto water and slow down digestion. A 4-ounce (113-gram) serving of these noodles contains between 1 to 3 grams of glucomannan.
