Super Food of the Week: Strawberries

StrawberriesThere’s nothing that says “hello summer” quite like eating a juicy, sun ripened strawberry. Strawberries serve a greater purpose than just fulfilling a sweet tooth as they are packed with health benefits, making it a nutritious fruit choice for your whole family. That’s why strawberries are my super food of the week!

At just 45 calories a cup, strawberries are a nutritional bargain with an excellent source of vitamin C and other phytonutrients including anthocyanins and ellagitannins, which are thought to protect us from cancer, heart disease, and other chronic conditions. The abundant supply of the all-natural antioxidant vitamin C helps to fight disease and is important for collagen production. Just 1 cup of strawberries contains over 140% of your daily requirement for vitamin C

While strawberries are good on just about anything whether it’s a salad, a dessert, or a jam, I definitely have two favorite ways that I like to enjoy strawberries and that’s covered in chocolate or blended in a smoothie!

If you’re in a rush to get out the door in the morning, don’t skip breakfast! Try this Strawberry Breakfast Smoothie to get your day started right! Combine the following ingredients, blend until smooth and serve! For some extra fiber, you can add some wheat germ to help make your smoothie last a little bit longer.


  • ½ a banana
  • ½ cup strawberries
  • ½ cup favorite yogurt
  • 1 cup chocolate or vanilla soy milk

If you know me well, you know how much I love chocolate. Let’s face it, I have a drawer in my office dedicated to it. Strawberries and chocolate are like the best combination ever and I don’t mean just for the taste! Like strawberries, dark chocolate is high in antioxidants as well! When you need a quick dessert to impress your guests, this is a “never fail” recipe! Melt chocolate in a pot on the stove. Once the chocolate is melted place each strawberry on a skewer and dip into chocolate until well covered!  Cool on a cookie sheet covered in parchment paper and chill in fridge until set.


  • Dark chocolate (melted)
  • Strawberries, washed and patted dry
  • Small wooden sticks
