Tea Smoked Salmon and Couscous Recipe Audra Lowe: For some people, it’s priceless to know how to prepare a home-cook meal that is easy, affordable and also delicious, at the same time. Celebrity Chef Ming Tsai is here. He's going to show us. How easy it really is. He’s got some tips from his new book called “Simply Ming One-Pot Meals.” And you’re also the executive producer of your own show? Ming Tsai: I do. Audra Lowe: You a lot of stuff out of Boston right? Ming Tsai: Right, I live in Boston. And you know, it’s a shame on October we have nothing to do and Yankees and Red Sox, right? Very weary for us. Audra Lowe: That’s why you’re here. No, let's talk about his one-pot meal. Ming Tsai: One pot meal. Look, it's all about. If you want to cook at home, you want it simple, right? The last thing you want to do is you have to clean-up your kitchen with six different pots. Audra Lowe: Exactly. Ming Tsai: So everything is done in one pot. This -- we’re doing a Couscous Tea-Smoked Salmon. So the pot as is actually one. The idea is simple, healthy, and you'll see how healthy this and affordable. Audra Lowe: And you could spend more time with the family -- Ming Tsai: Absolutely. Audra Lowe: -- while you’re at the house. Ming Tsai: Well, is there anything better than sitting down at the dinner table with your family? Audra Lowe: Right. Ming Tsai: There's nothing. Audra Lowe: What are you doing? What are you putting there? Ming Tsai: That’s olive oil, salt, and pepper. This is couscous, and couscous is the easiest starch in the world. All I did was olive oil, salt, pepper, and you cover. Audra Lowe: Okay. Ming Tsai: That’s it. Audra Lowe: And how long do you keep it covered for? Ming Tsai: Seven minutes. Audra Lowe: That’s it? Okay. Ming Tsai: Seven minutes and what you end up with is this. Audra Lowe: Imagine your TV, “Seven minutes have gone by,” and here it is. Ming Tsai: That’s the magic of me. Come on -- we’re talking about TV. And then you have this couscous, right? And you take the back with a fork -- Audra Lowe: As you see it. Ming Tsai: Right, and you flap it up. Now you you’ve got to get the work though. So I did it -- Audra Lowe: Okay, I got it. You got it? Ming Tsai: So I need you to -- I need you to chop something. Yeah I got it. Chop some chives. Audra Lowe: Only the man put a woman to work in the kitchen. Ming Tsai: Yeah, something like that. Chop some chives -- Audra Lowe: I'm chopping now. Ming Tsai: -- and chop some -- Audra Lowe: Alright. Ming Tsai: because with this, we’re going to do a little salad. It goes with the couscous. Alright, this is a petal. We’re making a petal zucchini salad. Audra Lowe: Okay. Ming Tsai: I love it, it has a nice quality to it, liquish quality. So you cut it in half, right? You wanted to take the core out because the core is kind of tough and I’ll do thin-thin slices, as thin as I can. Put all those on this bowl. You’re good, you did actually fast. Audra Lowe: I’m fast, yes. Ming Tsai: Right, so thin slice. And then we’ll have the zucchini. Everyone knows what a zucchini looks, right? This is a zucchini and we can do planks and we end up nice dice like that. Audra Lowe: And I'm putting all the zucchini in there? Ming Tsai: All of it. Audra Lowe: Alright. Ming Tsai: Now, we have something. I don’t know if you ever used this before. This is called preserved lemon. Audra Lowe: Okay. Ming Tsai: It’s salty and it’s delicious. So just put a big tablespoon. Audra Lowe: Okay. Ming Tsai: And add a little lemon juice. Audra Lowe: And this is going to give us some good little taste there. Ming Tsai: Yeah, that’s right. It’s beautiful. A little olive oil and I want you to mix this us with that spoon. So, I’m going to plate this Smoked Salmon for you, right here. This s a tea-smoked salmon and -- tea smoked, any salmon will work. So, I’m going to take a little bit of this. Audra Lowe: Alright. Ming Tsai: And this is how you can make something look pretty. This looks good. You did a good job. Audr
