Hi, welcome to my Low Carb Vegetarian Kitchen.Now I’m going to show you a really quick and easy called the cauliflower rice salad. So as far as you can see like a Mexican rice salad, we’ll be using cauliflower instead of rice. So we got a whole head of cauliflower here and I made it in a size fitted to our food processor here. I want to show you inside. I’ve got a grater attachment. So that is going to cut the cauliflower to flat pieces. And we go on to start here. I’ll just stuff the cauliflower in., see how quickly it is to grate them. Okay, it glazes the whole cauliflower now. And this is what it looks like. There’s about a kilo there of cauliflower or about 2 ½ pounds. So we put it in the mixing bowl, there you go. And I’m also going to grate up a cup of carrot. So these are medium carrots only about 100 grams. So again, we pout the grated carrots together in the same bowl with the cauliflower. Next, I’ve got one whole red pepper or capsicum. It’s about 6 oz, about 170 grams, one whole red capsicum. So we put it there together with the carrot and the cauliflower. Then we out some spices in there. I’ve got some coriander seed, about 1 teaspoon. Anyway you can adjust it according to your taster. Now, we’ll put one teaspoon of cumin, and I’m going to put ½ teaspoon of cayenne pepper. Be careful not too put too much in there. And finally I’m going to put some extra virgin olive oil. I probably need about 3 oz or 90 ml. And then carefully mix the ingredients well. And that’s how it looks when it’s finish. This is going to make about 6 servings. Each serving would have about 160 calories, 12 grams of fat, 5 grams of protein, and 6 grams of carbs which is really not too bad. And the benefit of this recipe is it’s a raw vegan recipe. No cooking involve, it’s quick, easy and nutritious. I hope you enjoy making it.
