Liz Wise: You know shrimp is low in saturated fat that is the bad kind of fat. It also contains heart healthy omega3 fats. Shrimp is versatile it is packed with lean good quality protein and you can eat it without any guilt. Hi! I am Liz Wise, let us go ahead and get started. We are going to make a shrimp and mango rice salad and we will begin with one mango. Now, to slice up a mango you want to slice the right along side the pit, see how easy that is. And we are going slice this into a ½ inch pieces. All right and will going to add our mango right to our rice, we have got here 1 cup of rice to cooks into 2 cups of rice of jasmine rice which is a really flavor for lovely rice. I cut out my mango ahead of time here and we are going to add all of our mango very simply. Once, we got our mango into our rice, I am going toss in our star ingredient which is shrimp. We have one pound of cooked shrimp, you can buy a frozen, you could buy at the seafood counter, and you do not even have to cook it. So, this is the super easy week night meal that you can make and for big flavor hit we have 1 tablespoon of chopped mint. Smells so good and just the quarter cup of toasted slivered almonds, almonds you know that is another food people think they can eat, nuts cannot eat them higher fat cashew is the good king of fat high in the mono unsaturated fat. Al lright, before I stirr this up I am going to make a very simple dressing. We are going to juice a lime, we have got the juice of half a lime or if your not feeling like doing this yourself you can buy lime juice already. Squeeze for you in supermarket, a little bit of olive oil, another one of those good for your types of fats and we have honey just 2 tablespoons, put that right at there. Good flavors here garlic, so we have like a sweetened savory thing going on and almost done. See how that is? But have of teaspoon of kosher salt and freshly ground black pepper. This is really kind one of those ingredients that you can add a little bit of pepper or a lot of pepper depending on what you are particular likes are and we will just go ahead and whisk this dressing together and you are pretty much done.
