When you want to unwind, pasta primavera is the answer. It’s the culinary equivalent of putting your feet up and that’s because of the carbs and the carbs are right here in the pasta. And I have here 12 ounces of wholly fettuccini in to the pot. I slice up some mushrooms here cap all together, mushrooms are loaded with a nutrition they’re rich B vitamins and potassium, they are more than you think. That oil is nice and hot I’m just going to put some garlic into the oil, three cloves of garlic which I’ve minced up here and I’m going to put in my peppers, red pepper here loaded with vitamin C that I’ve just cut up into thin strips. I’m just got to let this soften for a couple of minutes. While that’s cooking away, get some asparagus chopped up. And asparagus always reminds me of spring. So you got to have some asparagus in the primavera. Half a pound. Next up tomatoes and I’m using grape tomatoes here, A cup of grape tomatoes. So it’s not a big heavy pasta dish, really light, satisfying and relaxing. Okay, so add all of this into my dish, I’m going to cook this just for couple of minutes. I don’t want them to be really cooked. just regular all purpose flour, then I’m going to stir it right into the vegetables here, sprinkle on and stir it in. and what this does is it thickens the broth, gives it a creamy texture. Now all this veggies are well coated with the flour and the flour will dissolve in this milk. I got a half of cup of a low fat milk and this will create a thick creaminess. and have some chicken broth here, low sodium chicken broth one cup and this is a really nice touch of this dish. I’m just going to use this vegetable peeler to make carrot ribbons and I’m going to put this in at the very end and because they are so thin they don’t need to cook a lot. So bright and beautiful. Stir them in and it will soften a bit and that pasta is ready to be taken off the heat. Strain that. Delicious wholly fettuccini, all the anti oxidants and fiber and a great nutty taste. Going to stir it around, it really makes a difference when you heat it all together. Okay, that’s well combined. Ill just shut that heat off and I have a few finishing touches. Some parsley, fresh parsley two tablespoons and about a quarter cup of fresh basil leaves. Just chop them all together here, they are all going in the same pot. Next some parmesan cheeses about a half of cup here and I’m going to stir that around and there is one gorgeous pasta primavera. I’m going to be just chilling out eating this in no time.
