Hi, I am Pam Austin, ediets director of nutrition services and registered dietician. Today we are going to be making an exotic dish, Orange Chipotle Chicken with Mung Bean noodles. We love this recipe because it is so flavorful and satisfying, but most of all we love it because if you do not have time to cook it, we can get it freshly delivered to your door. Minced green onions, garlic, ginger and orange zest combine with rice wine vinegar, sesame oil, black pepper and orange chipotle marinade. Add the chicken breast and marinate for four to six hours or overnight, place on an oven pan and roast in the 325 degree oven for about 10 to 15 minutes. Now we are going to make those transparent noodles, weigh out the Mung bean noodles in a large container, you will need enough space to add in the water. Pour the boiling water into the container of noodles, allow the noodles to sit and absorb the water, this should take approximately 30 minutes. Drain noodles completely, add red pepper flakes, parsley and black pepper to the noodles, mix evenly. Now let us go on to the garbanzo-carrot slaw, small diced the roasted red peppers, thinly slice the green onions, shred the carrots julienne style using a food processor or peeler. In a large bowl, combine chick peas, cabbage, roasted red peppers, green onions and carrots. In a small bowl, combine the vinegar, olive oil, thyme and black pepper, whist together and pour over the vegetable mix, stir to mix evenly.
