Nachos are everybody’s guilty pleasure but the problem with them is that they’re so full of fats. Now, I’ve come up with a way of taking the guilt out and I call this my Na’cho Nachos. Instead of using traditionally fried corn tortillas, I have some whole wheat tortillas baking off in the oven here. So, at 350°, I merely cut them into wedges and cooked them until they were golden brown. Now, I am going to start building my Nachos with these as a base. These are really high in fiber and low in fat. Use out onto my oven fruit plate here. What I’ve chosen to use are black beans. Black beans are one of my favorites. Now, this is just a can of black beans that I’ve drained. I am going to start just putting them all over my chips like so. If you don’t like black beans, feel free to use pinto beans or the beans of your choice. These are high in fiber and high in protein; really good for you. Top these off. Now, I am going to use a low fat pepper jack cheese. I’ve chosen pepper jack because it has that wonderful kick that I love so much and because it’s low fat, this is no time to skimp. This is what I love about Nachos, the cheese. This is the binder. This is what brings it altogether. These are going to go back into my 350° oven until the cheese is really well melted. So, it will take about 8-10 minutes. All right, so let’s pop this out of the oven. That cheese is all nice and melted and you got some crispy brown whole wheat tortilla chips there. Now to top if off, add some tacos seasoning here. I’ve made this myself. It has ground cumin, chili powder, some granulated garlic and onion but if you don’t want to make your own, you can simply buy a package at the store. This is what give these so much flavor. Sprinkle that all over just like that and then, I am going to start topping off with some of my favorite ingredients. Now, this is where you can use whatever you want but I happen to love fresh tomatoes. All right, the fresh tomatoes, I’ll just put those around. Now, I am going to put on some green onions. All right, sprinkle those all over. Now, I am going to put on some low-fat yogurt. You can use low-fat or non-fat, also sour cream. I really like this low-fat Greek yogurt. So, I am just going to top it off. I like to spread it around just because I really don’t like fighting for the ingredients on my nachos. Now, I am going to put some guacamole. I made some guacamole just with a little bit of cilantro and some onion but you can certainly use a store bought guacamole. Now, I am going to squeeze some fresh lime juice on top. Lime juice is a great way to add flavor without adding extra sodium. Garnish it with a little cilantro. Fresh cilantro, there’s nothing like it. So, what I like to do is take it and break it, just kind of put it all on top. Now, my Na’cho Nachos are no longer a guilty pleasure but a healthy meal.
