Mushrooms, they not only taste good but are good for you. Today, we’re cooking with Clare Jones from Mushrooms Canada and she’ll be sharing her fresh and crunchy salad filing that makes a delicious, low-fat sandwich. It’s fast, easy, and packed with goodness. This is Daily Web TV. Meriel Bradley: If you’re looking for some great recipes to aid you in weight loss, then don’t go away because we’re here today with Clare Jones from Mushrooms Canada. Now, you have a great recipe to show with us today. Clare Jones: I do. Today’s recipe is Mushroom Pita Pockets. Meriel Bradley: Now, is this low fat? Why is this good for us? Clare Jones: It’s super low fat and it’s using mushrooms. And fresh mushrooms are actually great for weight management because they’re high in water. They have some fiber, virtually no fat and because they’re high in water, they make you feel fuller. Meriel Bradley: Because that’s one of the things if you’re watching your food intake, you don’t feel full. Clare Jones: That’s right. So, the mushrooms is going to help with that. And you know don’t need as much that way. Meriel Bradley: And they’re full of nutrients too, correct? Clare Jones: That’s right. Meriel Bradley: So, how does this go? Clare Jones: Well, first of all we have 12 ounces of sliced mushrooms. I’m just using the white mushrooms today and it’s really simple to put this together. And we’re going to add some veggies to that. So, 1/2 of chopped cucumber, 1/2 of chopped red pepper, and 1/2 of chopped green onions. So, you can really vary those if you want. You could use some cucumber or green pepper or whatever you have on hand. Meriel Bradley: Right. Clare Jones: And we’re going to add to that 3/4 cup of shredded cheddar cheese. Meriel Bradley: Now, if you want this to be also low fat, could you left the cheese out? Clare Jones: You could, or you could use a low fat cheese if you wanted to. Meriel Bradley: But that gives you some nice protein, right? Clare Jones: That’s right. Meriel Bradley: Yeah. Clare Jones: And now we’re going to add 3/4 cup of low fat Italian or herb dressing to this and again that keeps the fat content down. Do you want to just give that a stir? Meriel Bradley: Yes I do. Clare Jones: And stir it all up and then it’s as simple as stuffing your pita pockets with that. So, we’re using four pitas cut in half so that actually makes eight sandwiches. Meriel Bradley: Right. So, you know what I’m stirring this and this looks like you could use it as a side dish too. Clare Jones: You could, you could use as a salad, maybe put on some fresh lettuce leaves or something like that, it’d be a great side dish. Meriel Bradley: And that’s it? Clare Jones: That’s it. Then, we’re going to stuff it in the pita pockets so if you want to get a pita that I’ve lined with some lettuce and we’ll just put it in there. But it’s a great option if you take your lunch to work or to school. In that case, what I would do is just put the filling separately and then fill the pitas when you get to work or to school. Meriel Bradley: Right. Clare Jones: Because otherwise it could get a bit soggy from the filling. Meriel Bradley: Yeah. Look at that. And that’s it. Clare Jones: That’s it, simple. Meriel Bradley: So, that took us what? Two minutes? Clare Jones: Yeah. Meriel Bradley: And then a little cutting time. Clare Jones: That’s right. And the mushrooms are so low in calories too. A cup of fresh mushrooms sliced is only 22 calories. Meriel Bradley: Wow! Clare Jones: Yeah, or half a cup cooked is 22 calories. Meriel Bradley: Wow! So, how much fat does this recipe have? Clare Jones: One serving of this which is the half sandwich, it has 0.8 grams of fat so it’s virtually no fat.
