On behalf of tvlesson.com, I’m Phyllis Kahn with the Gourmet Way. Okay in this clip I’m going to teach you how to make a Mediterranean inspired salad. What I’ve done is I’ve diced up some vine ripe tomatoes and I’m going to show you how I core out the inside of the tomato because you really don’t want this seeds. You just take the inside like that and you get rid of that. And dice that up in quick chunks and same thing with other half, because we don’t want those seeds and we just put in some chunks, get that right in a bowl. Then we have a diced up cucumber, you can use a whole cucumber, a half of cup cucumber and about a cup and a half of cut up water melon. and then we squeeze the juice from a grape fruit and we take the sections that I’ve cut and put those in there and whatever juice left at the bottom we squeeze like that. Then with the kick put about an eighth of a teaspoon of cayenne pepper, about a half a teaspoon of salt, then you add about a quarter of a cup of red wine vinegar and then one pack of a sweet and low to make it sweet and savory. A lot of vinaigrette has sugar in it, our vinaigrettes have splenda in it. Give it a nice toss with your clean washed hands. Add a little parsley for decoration and then if you like it to be a little bit richer? Richer, Sorry. We take some crumpled feta cheese, the non fat kind and sprinkle about a table spoon of that over it and there you have a Mediterranean inspired, delicious summer salad.
