Tonight, we are going to make an amazing zucchini salsa sauce to go over top of our fish. Now, four servings of fish is about one pound an d I have a little more than one pound here but I have a little more than four people in our family. To start, what we are going to do is we are going to put some—brush some butter onto our fish. Now, I do not actually use butter in my house. I think what I am going to do is I am actually going to tack under the edges of some of these really thin pieces of fish, just a bit they do not burn. And we have a little bit more of a uniform fitness of fish. Here we go, not too many there that we need to. Okay and then I am just going to add some pepper. I like my freshly ground pepper best. And at this point if you like to put salt on your fish, you are welcome to it. I do not like to add salts too much of my cooking and you should that at the table if any at all. Now, we just need to bake it in the oven at 450 degrees for only about four to six minutes for every half an inch. So, it will not take very long at all. Okay, oven is at 450 degrees. I am just going to put our fish in. Now, if you notice I am cooking on a stone. I love my stone so much more than glass or metal. It seems to cook and clean up so much easier. Okay. As it starts to actually boil, you can hear it more than see it. So, what I am going to do now is turn the pot down to a simmer and cover it. That looks really good. All right, I think we are ready to serve up. There it is, a delicious dinner, a fish zucchini and salsa altogether with some great vegetables on the side. Doesn’t that look delicious?
