Light Lemon Filled Low Cal Angel Cake Recipe bettyskitchen Hi I’m Betty. Welcome to Betty’s Kitchen. We’re going to do a lemon filled angel food cake. You want to start with the filling. We need instant lemon pie filling or pudding mix to that we’ll be adding 1 cup of skimmed— I’m sorry this is 2 cups of skimmed milk and then beating that together until it begins to set. Now I did that last night and let it sit in the refrigerator until it turns out like this and it’s fully set. You can see the consistency. To this I’m going to add light lemon flavored yogurt and this is a 6 ounce cup so I’m just going to open this up and spoon out all of that and mix together. So just lightly mix it. It seems to have a lot of air in it already and we want to keep that fluffiness if we can. So we have our filling, you just keep stirring that until it’s all yellow because the yogurt actually has a kind of white color and you’ll know when it’s incorporated with everything that comes homogenous. So that’s ready, now we go to our angel food cake which is something you can pick up at the bakery section of your supermarket and I have used my knife to go around the center that’s kind of hard because it cooks over the top and around the edge and hopefully this will come out so I’m going to turn it upside down and on this, oops. I love missing this there but it came out and what you do is place it on your cake stand like that and you get ready to serve an angle food cake. Now we’re going to make it into layers so we have a filled angel food cake so I’m going to bring that over to my work space and what I plan to do is to use an electric knife to divide this into thirds. You can use a regular knife, I just find it more convenient to use an electric knife because it’s a straighter and easier to do so forgive me for the sound but here it comes. I’m going fluff that one but that’s our smallest layer and then we move on up and we have our next layer and don’t worry about this being perfect, it doesn’t really matter and then this is our top layer, I think I should do some shifting here. No, I’m sorry. I’m going to turn this one upside down because that’s the bottom of the cake. When I get it to this point I’m ready to start my filling so I just use a spoon and spoon that filling around. It doesn’t have to be perfect. You don’t want to put too much because these layers might start sliding but you want enough to put that nice zingy flavor into there. The lemon gives it some zest and also the yogurt has that bite to it which is nice so there is one of our fillings and we go to the medium sized portion and I think I kind of got it lopsided in this direction so I’m going to straighten it up a bit and put it right there and it can go with my next filling and this is actually the last time I have to put the filling on of the icing in just a few minutes. So I can use as much of this as I like but I don’t want to get too outrageous because I want to be able to cover it with my icing and if I have too much of this that might be kind of impossible so there we go and then we’ll top it off with this, let’s see our lowest and highest sides try to get it straightened up, that looks pretty good so let’s go to our icing. It’s just a simple whip topping, it’s fat free, you do not have to do the fat free but I like to d that and I’m going to use the spreader here and this was bought frozen but you’re going to put it in the refrigerator overnight so that you have a consistency that will spread. It’s still cool but it is spreadable so just keep coming around the cake. It doesn’t have to be perfect and for me I’m hurrying along so don’t expect every spot to be covered if you are fanatical about that then go ahead and cover every spot that you like but our goal is to get the outer layer, outer edge covered and then the top covered and a little bit down inside. So I’m almost finished, just keep turning that plate go and we have that done. So
