Today we are going to be preparing lemon or chicken with roasted red potatoes and green beans. It is easy to prepare as a wonderful combination of great flavors, not only that, if you do not have time to make it at home, we can have it freshly delivered straight to your door. Chop two garlic cloves, two table spoons of onion and two large leaves of basil, pour rice wine vinegar and olive oil in a shallow dish, add the half of the garlic, half of the onion and basil and mix it well. Marinate the chicken and its mixture over night in the refrigerator. If you are preparing this on the same day, try to give it a few hours in the marinade. Now begin preparing the roasted red potatoes, chop a large spray of parsley and combine with the remaining garlic and onion. Stir a table spoon of olive oil into the potatoes add the herbs and mix well. Lay the potatoes out evenly on a baking pan, roast 1in a 350 degree oven, 25 minutes. Next, we are going to do the green bean with sliced roasted red peppers. Place some sliced red peppers on the tray on the toaster oven and broil on both sides approximately three to five minutes until you see small darker marks on the edges. We are going to steam the green beans and remove them when they are bright green approximately four minutes. Chop the roasted red pepper into small pieces and mix with the beans. Place the chicken breast on an indoor or outdoor grill, brown a few minutes on each side. I like to turn it a couple of times to get those cross hatched square marks on each side. About 10 minutes before the potatoes are done, place the part grilled chicken in to the oven next to the potatoes and bake approximately seven to 10 minutes. Remove when the chicken is white all the way through but still moist inside. Serve all the ingredients on one dinner plate and garnish with parsley. You can download this recipe from eDiets website.
