Male Speaker 1: If you had major diagnosis of celiac disease and you are going to council some on a diet, what would be the major things that you would tell them to avoid initially? Male Speaker 2: Any product that contains wheat, rye, barley and you have to be careful about oats. Oats is not really in the spectrum but some of the oats are farmed using the same equipment as wheat. Male Speaker 1: So cross contamination? Male Speaker 2: Yes, cross contamination. Male Speaker 1: A baby formula oats is that pure or is it contaminated? Male Speaker 2: You'd have to ask the manufacturer people, it's silly I call the manufacturers to ask them. You'll have to find out how it's manufactured. Male Speaker 1: Okay but the classical replace of bread is what rice cakes? Male Speaker 2: Yes, any kind of rice product would be fine. Male Speaker 1: Okay so now, you took all these out of the diet and yet be careful on lot of things you have things put in you don't even know. See if you have to really check there are plenty of good places to go and check. But it seems that such a high number of patients involved in this, there's a big industry being formed getting substitutes, is that true? Male Speaker 2: Yes, and there is the American Academy of Paediatrics and the GI North American Society, they have a website for information on celiac, GI North American Society it's a whole host of information on products that you can go online and look at. Male Speaker 1: It's not that easy jive, but if you get a person from tremendous discovery, play the thrive it's only striving you know you have to do it and you can't cheat, just like you go hop on Kangaroo wedding and that day I'm going to cheat because you're stealthing back a little bit. Male Speaker 2: If you cheat it probably sets you back about six months. It will take clearly three months for the villi that get affected to revert back to normal and while the villi are damaged depending on the degree of damage you're not absorbing milk, sugar than you're not absorbing starch and protein as time goes on and then it takes time to reverse then. Male Speaker 1: So basically fruit and vegetables are free and avoid the common stuff we have. Male Speaker 2: And meat, chicken, fish -- Male Speaker 1: Milk? Male Speaker 2: Milk. Male Speaker 1: But we have to be careful about flavorings or stuff -- Male Speaker 2: Yes, soy, teriyaki. You'll also have to be careful about candies; you know what added is -- they have added to candy to lipstick to mouth blows. Male Speaker 1: It's a huge thing.
