Eating Low with Amy! Your guide to low carb, low cal, low fat cooking! Episode 16: Tomato Basil Tuna Hi! This is Amy and welcome to Eating Low. Today we’re going to be making a really simple just kind of spice up version of tuna salad because it’s the weekend and I need a lunch I’m really busy today so I want something quick and easy but that’s going to taste good. That’s why I’ve got my tuna that just comes in one of these packets like the StarKist Albacore Tuna. I like Albacore better instead of the light tuna but it just comes in a little packet and I put it in a bowl then I’ve got some fresh basil that I’ve chopped up real small and I’m just going to throw that in there too. I love to my little basil and then finally I’ve got little cherry tomatoes and these are actually even smaller than cherry I guess they’re called grape tomatoes, they’re like the next size down, they look like little grapes. So I’ve cut those really small which I probably going to cut in half and then I cut them in half again and cut some of those pieces in half again, so just make them kind of small. I’m going to throw them in the bowl too and then I’m just going to use a little tiny bit of the lite mayo probably about a teaspoon or so to start with and then just I want to mix that up. You only use too much of the mayo because it does add fat and calories so I’m really trying devising as little as possible and the tomato will help them when they get kind of squeeze and mix in. There's liquid in tomato so that helps kind of blend everything together too. I’m going to add just a little bit of this – it’s the steak house seasoning. I still be putting on everything lately because it’s just a good mix, it got pepper and salt and like all kinds of good stuff in there, you can add any kind of salt and pepper that you want. So let’s take a taste to see what it takes like. That’s really good and you know I actually don’t need anymore mayo which is the perfect amount just enough to kind of hold everything together but not – you don’t want it drowning in it. So there you go. I don’t know what to call this one but I guess I call it tomato basil tuna. Anyway thanks for eating low with Amy .
