Hi this is Amy and welcome to Eating Low. Today were going to be making Tilapia with salsa and it’s a really, really super easy dish. This is one of the easiest dishes I made and I call it guess worthy because it tastes good it looks good. Everyone will be all impressed when you like whip out this big packet with fich in it. it looks like that it took forever to make but it really doesn’t. So what I’ve done is, I put out cooking sheet and I have a tin foil laying over the cookie sheet and I’ve taken my two tilapia fillets and they’re washed and rinsed. I skipped that part because it takes forever but I slapped them down on my cooking sheet and this is literally all you need to do, get some salsa. The salsa I have is Jack Special Garden Fresh Gourmet and it’s medium and it has two carb grams and that’s really good for salsa. It’s very low carb salsa. I found it in the deli section of my store. I’m not really seeing it anywhere so good luck finding but anyways, we’re going to take the salsa and I’m just going to drop probably about three maybe four table spoons of the salsa on top of the tilapia fillets and then I’m just going to spread it around. And remember, don’t stick this back in there once you touched your fish, that’s not good. So was trying to make sure I have enough before I start spreading and I’m just coating them with the salsa and getting them all nice and covered. That part is done and I’ve just got a little thing of a lime juice. It’s the kind you buy in the store that looks like a lime and opening it up and I’m just going to give it a little squeeze all over the top. And you know not a whole lot, but just a little to give an extra flavor and then were going to take this and make a little packet and I’m just going to fold that over that way. Fold this guy over this way and then it’ll come out like cellophane. Oh, my oven is done and that’s preheated just in time and it fill up the ends of little packet and there you go. You’ve got like fish in a little packet. So I’m going to pop them in the oven, slap them here. And then I’m going to give it 20 minutes. So at the end of 20 minutes, it’s going to come out you’ll at perfectly flaky, it looks great, its oh I love this recipe. It’s supper easy. It’s super tasty and other one of those that I have a lot just because it’s really easy and really good. So we’ll come back when this is done and you’ll see the finished product. So my timer went off and my fish is done cooking. Now, I’m just going to open the packet, that little juice popping out. Two beautiful perfectly cooked tilapia fillets. I just need to put onto my plate and I’ve already just whips a little, it’s just greens, it’s turnip greens, colored greens or turnip greens, mustard greens and kale. And I just start by that and with a little bit of garlic and soy sauce. I like my vegetables kind of crispy so I always like sauté them a lot. That’s one of my favorite little side dishes. Now I have two really beautiful fillets and they look—oh they look fantastic. I love this dish. It’s ht. There is your finished product and yum. Ad now it looks like perfect so like you could serve that so like if your parents are coming or whoever. It’s a great meal. It looks kind of fancy. It taste really good. If you want you can add—I’m just going to add a little bit of salt and a little bit of pepper, just stick it up a little notch, bam, bam, bam!. I’m just kidding. So that’s like seasons it up a little bit. You don’t actually need that like it tastes really good just with the salsa. So there you go. That’s Tilapia with salsa and thanks for eating low with Amy.
