How to Make Raw Salsa for a Raw Taco Male: And the next thing we’re making is just a simple salsa and you know, it’s not really such a big departure from typical salsa except that we’re using incredibly fresh ingredients. They’re all organic. Female: Everyone loves salsa. Male: Yeah, right. Let’s chop it a little bit because we’re going to process this as well in here. Female: You try to buy everything at the farmer’s market. Male: Yeah definitely, they have a great selection of organic food at the farmer’s market and we know it’s grown close to home which is nice. It didn’t sit on the truck for two weeks before getting to us. Female: Yeah, exactly. Male: And again here, we’re not trying to make these two watery. We just want to -- just do a light chop on them. Fresh cilantro another key to excellent mixing food. Female: Yes, cilantro is very appealing too, isn’t it? Male: Yeah, definitely. It’s a detoxifying herb. Female: Right, yeah. Anything green. Male: Yeah, exactly. And we use -- we’re using a lot of green here in this recipe in particular. And I'm just taking -- I'm just taking the leaves off the stems. The stems are completely edible but it’s a little nicer texture when you’ve got just the leaves. We’ve got some scallions or green onions, and something with that, just a few of those. We’re going to get a couple tablespoons of lemon juice. So, you see -- we’re really just using all the same ingredients that you’re used to with the salsa. A little minced garlic. Female: My favorite. Male: Right, just smell it. Female: I love garlic. Everybody else has to eat it. What I love about raw food is that the tastes just bursts in your mouth and your body is just delighted. Male: Yeah, I mean I think a big part of that is the fact that we used fresh herbs so often and it’s a real treat in food preparation of any kind to just use fresh herbs. There’s a lot of flavor in something like this. So you put it in into a dish like salsa and it’s traditional but it’s also more -- like you said, more of a punch than something you’d get at some other restaurant. So really, we go back to our color green leaf and our tortilla. And we’ve got our meat filling and walnuts. Female: It’s great, it’s a good combination -- the proteins and your good carbs. Male: Yeah. We’ll layer that. And at this point, it’s just like building a taco. Female: Right. Male: We’ve got some fresh -- Female: Because they’re such in this -- you really don’t need protein from animal products whatsoever. Male: Absolutely, there’s tons of protein in all foods really. Female: Vegetables. Male: Yeah, absolutely greens. Female: And some fruit like avocado. Male: So some fresh lettuce. And we got our salsa. Female: Look how beautiful that was. Male: You’re going to taste this, right? Female: Yes. Male: Okay. And there’s no fresher and healthier taco in the planet than this one. Female: It’s great. Male: We will do that and there you go. Female: Okay, thank you. Male: Sure. Female: It’s fun to eat too -- wow!
