[Music Playing] Hi! I am Chef Keith Snow. Welcome to my kitchen. I want to show you to make a very simple wild mushrooms sauté. Very simple dish to make here are wild mushrooms and this is a combination of shiitake and [Muffled] and these are wild mushrooms and they have a lot of flavors so let get started. Right here we got a sauté pan that I have been preheating and I am going to turn on the fan cause it get a little bit smoky and we want to put in two fats. We are going to put in just a little bit of extra virgin olive oil and then also a little bit of organic butter and the butter is going to give a great flavor. Now we will take our shallots. You can see that the butter is starting to brown right away and then we have got a little bit of garlic that is minced so I get the garlic in there and go right away with our mushrooms right in the pan. Season this up with some salt and pepper. When we add the salt that going to help the mushrooms release some of their liquids. And this is the great spring dish with wild mushrooms sauté. A little bit more salt you can see that the mushrooms are really want to drink up that oil give a little flip and were lucky here on our farm in North Carolina. If you go into the woods, in the late spring if we had a moist spring which we have had this year, our woods are loaded with wild mushrooms and usually there are [Muffled]. And I can go out there and pick a pile of them in 10 minutes so I am hoping that when I went to walk in the woods this year I will get some wild mushrooms. So this sound take a lot of time and you really do not want to over cook them and I will going to scrape this a little bit and let the camera men see that there is a lot of good flavor on the bottom of that pan. So we want to take it out with some dry white wine and that pour is called deglazing we would deglaze with the white wine and now were going to come back right here and add just another little touch of our butter and then we have some fresh chives from my garden. We will get all those chives in there and I will do a little bit of clean up work. We can turn off the heat and just want to stir the butter and the chives through and this, man if you could smell this right now it is unbelievable. We will put it on our plate here this is going to be a great little side dish. You could put a piece of chicken or fish over this or even mix it in with some fresh pasta. And you will be living in large so there is a gorgeous spring wild mushrooms sauté.
