Host: If there’s one thing that we could eat for the rest of our lives without blowing up like a balloon, most of us would go with pasta but if you’re a pasta lover who wants to watch your waistline, Jennifer Iserloh is here, aka the skinny chef, she’s got some pasta secrets that will definitely make your day and help you out when you’re making the pasta and you’re getting all excited in the kitchen and you’re like yes. Jennifer: Everyone loves pasta. Eating pasta all the time can get a little old so when you make it fresh and interesting, you can enjoy your meals more but have it healthier as well. Host: What are you secrets when it comes to making pasta is to go with whole grain? Jennifer: And a lot of people don’t like whole grain pastas because they think they taste like cardboard but there’s different ways to go. I have some – pasta here, brown rice and whole grain pasta that’s mixed with white flour. So these are all tender and delicious and the tip including whole grains as part of your meal is that the fiber can keep your blood sugar more level and it can keep those midnight munchies away. Host: Whole grain whole wheat, big difference between those two? Jennifer: No whole grain is just a general classification, whole wheat fits under that so whole grain includes oats, things like – and brown rice. Host: How much better is this for you than plain regular pasta? Jennifer: You’re getting tons of fiber and minerals to boot so what’s great about the fiber is that when your blood sugar stays even and it doesn’t spike then you get those crazy sugar cravings and you have a tendency to eat less through the day. Host: Your other secret is to keep the creamy cup the --. Jennifer: This is my favorite tip and this is a beautiful pasta carbonara that’s from my new book secrets of a skinny chef and instead of loading up on heavy cream, I use delicious creamy low fat Greek yogurt. It’s creamy, it’s full of protein and your cutting way back on the fat by 75%. Host: How does it taste? Jennifer: Delicious. It keeps that creamy flavor in, you can still go ahead and use your bacon. I use turkey bacon and put a little fresh grated parmesan on it. Host: You’ve got the lemons here and obviously a few things to make it zesty. Jennifer: And you know when pasta gets old, it’s usually because you’re using the same old jarred sauce but what’s great about fresh herbs, lemon and zest is that you can add these to any jarred sauce and it picks up the flavor, zero fat, tons of flavor and it makes it more interesting. Host: Last but not least, one pot wonder, that’s what you call it, this is though because people have issues with portion control especially when it comes to pasta. So what do you mean by keeping it a one pot wonder. Jennifer: When I was in college, I used to just make this gigantic pot of spaghetti. But with my trick is to remember with your one pot wonder, cut half the pasta and add half vegetables so you can still have that nice generous bowl of pasta but you’re getting veggies in it and you’re cutting back on carbs. When those people have their pasta, they’re having four to five times the serving size in one meal than they should have. Host: She’s making portion control a little bit easier for the rest of us.
