Healthy Mashed Potatoes Recipe Male: You’re watching Everwell, Know More, Live Better. Liz Weiss: Everyone knows that mashed potatoes can be a cardiologist’s worst nightmare loaded with lots of butter, sour cream and bacon. They’re typically very high in fat and calories, but they don’t have to be. Hi, I’m Liz Weiss and I’m giving you mashed potatoes makeover by slimming down the fat and adding more nutrition than ever. Let me show you how. In this sauce pan, I've got three pounds of Yukon Gold Potatoes and a pound of sweet potatoes -- no nutritious. I've peeled them and I cut them into half-inch dice and they’re going to boil for 10 minutes. I've drained and now, I'm going to add all of really great ingredients -- lots of flavor but lots of fat. This is four ounces of reduced fat cream cheese. It’s actually 30% reduced fat. We’ve got half a cup of fat-free sour cream. You can go with the reduced fat or a fat-free. It’s going to taste pretty much the same and mixed, you will never know the difference. We’ve got half a cup of reduced fat cheddar cheese -- this is shredded up, so it’s going to mix in nicely, and half a cup of grated parmesan cheese. And it goes -- we’re almost done. Butter -- 1 teaspoon. Now typically, you’re going to find lots and lots of butter in mashed potatoes, not mine. A teaspoon and a half of Kosher salt. Kosher salt is actually lower in sodium that regular table salt and it tastes better. And a pinch of nutmeg. Finally, some pepper, a few grinds of pepper. Now, comes the fun part where I get to mash it altogether. By adding just one sweet potato, you’ll be getting over a day’s worth of immune boosting vitamin A. Now, this is a great recipe when you’re cooking for a crowd. You could serve it right out of the pot, out of a bowl, you could put it in the baking dish and we’re going to heat it in the oven -- anything goes.
