[Music Playing] Hi! I am Pam Ofstein, Director of Nutrition at ediets.com. In the early middle ages, young men were prohibited from marrying because they were needed as soldiers. A priest named Saint Valentine would secretly marry the soldiers and their loved ones. But tradition of sending love notes arose from the need to keep their love a secret. On the valentines menu today, we have artichoke court salad, beef tenderloin with cherry wine sauce and a sparkling wine pouch pair. We are going to boil the artichokes and roast the red peppers. Now, let us dice the red peppers and toss with the artichokes and the dressing. Let us increase the heat to medium and place the tenderloin in the pan. We are going to cook about three to four minutes and searing it on each side born until it starts to brown a little. And then going to remove the tenderloin from the pan and let us set it aside, keeping it warm. I am going to stir a little bit of the wine mixture into the same pan using a spatula just scraping the pan to loosen the brown bits. We are going the sauce to a boil and cook until reduced about half. Dissolve the cornstarch and water. Then, turn the heat down to medium and whisk the cornstarch into the sauce until it is smooth. Removing from heat, we are going to stirring the butter and whisk. Pour the sauce over the tenderloin and we are ready to serve. Peel and core the pairs, then cut a thin slice from the bottom of each of the pairs to form a base for the pair to stand on. Place the pairs upright in a heavy saucepan or Dutch oven. Pour in the sparkling wine and chooses over the pair. Now let us sprinkle in the cinnamon and close to taste. Bring this mixture to a boil. Reducing the heat and simmering about 10 to 15 minutes or until the pair is tender. Was not that meal delicious?
