Hi! I am Liz Weiss. When I was a kid, I loved chocolate pudding which probably explains why I make it for my kids all the time today. But, instead of using one of those instant pudding mixes, I make it from scratch using fresh and wholesome ingredients. So for my makeover, I am going to make chocolate pudding with toppers and it's very easy. You begin with just half a cup of granulated sugar and we add this to a medium saucepan. Into that I have got a third cup of cocoa powder and three tablespoons of cornstarch, this is what's going to thicken it for us. Okay, we have got a little pinch of salt that I am going to add as well. Now I want to whisk this all together until it's nice and combined. Once this is whisked together, I'll go ahead and whisk in 1% low-fat milk. I have got two-and-a-half cups here and I like using low-fat milk because obviously we are cutting the unhealthy saturated fat which you would get from whole milk and because we are getting all this great calcium. Take some minute to whisk this together. So once the milk and all the dry ingredients are combined, we are going to get some heat going. We'll bring this up to a medium-high heat. We will get this liquid up to a boil and once it comes to a boil, we will lower the heat and we will simmer the liquid until it all gets nice and thickened, and that's going to take about two minutes. So next step, we are going to add half a cup of vanilla low-fat yogurt, and we are just going to stirred add in, we will whisk it in, and a teaspoon of vanilla extract. Looks pretty! Whisk that up and our last step is simply to take a half-cup measure and use it to scoop out this chocolaty mixture into individual bowls. You'll want to cover this with plastic wrap or tin foil, that's kind of optional just to prevent the film from forming on the top. Into the fridge they go for about an hour and then we are ready to top them. Our pudding makeover is done and now we are ready to top it. I love the combination of chocolate and fresh berries. So for my chocolate pudding, I am going to top it with some fresh raspberries, you can use strawberries or blueberries. And we have also got some walnuts here, some chopped walnuts.
