Speaker: Are beans a good source of carbohydrates? Jeannette Bessinger: Beans are extra source of carbohydrate. They have a very small amount of sugars, so they have a low glycemic load, but they are very high in fiber and they are high protein. So bean technically is half protein half carbohydrate and fiber and protein act like time-release for glucose. So it's a very nutritious complex carbohydrate and so they have done some pretty significant studies about people who eat beans and what we know is bean eating children and adults tend to have smaller waist lines and they tend to be a little slimmer, then their non bean eating counterparts.
