Monosodium glutamate or MSG for short is a drug. MSG has no flavor and it artificially enhances the taste of food by changing the way the tongue nervous system and brain communicate. It does this by causing neuron cells in the mouth to over react to different flavors. Unfortunately this over stimulated cells exhaust themselves and die within 30 minutes of eating high levels of MSG. Neurons swallow up like balloons and die after three hours and with low doses they die after 18-24 hours. For these reason many researchers state that MSG is a neuro toxin. More than 500 million people world wide react severely to very small amounts of MSG. Common reactions include dizziness, headache, flashing and burning sensations. MSG is a never safe. Even if you do not react to it and that is why you should avoid it.
