Veggie and Goat Cheese Scramble

Ingredients

  • ¼ cup chopped red or green bell pepper
  • ¼ cup chopped onion
  • 2 teaspoons olive oil
  • ½ cup chopped tomato
  • 1 cup egg substitute
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • ¼ cup crumbled herbed goat cheese

Instructions

Sauté bell pepper and onion in oil in a large non-stick skillet over medium-high heat 2 minutes; add tomato and cook 2 minutes or until liquid is absorbed. Reduce heat to medium; Add egg substitute, salt and pepper. Cook, stirring occasionally, 2 minutes or until egg is cooked. Sprinkle with goat cheese. Let stand until cheese softens, about 1 minute.
