whole wheat pasta with spinach

Try this diabetes-friendly recipe for whole wheat pasta with spinach, tomato, and feta cheese. A perfect dinner option for a date or for the whole family.

Ingredients 

  • 2 garlic cloves, chopped
  • 2 tablespoons extra-virgin olive oil
  • 4 large plum tomatoes, chopped
  • 4 cups fresh baby spinach
  • ½ teaspoon kosher salt
  • ½ teaspoon dried oregano
  • 1 (8-ounce) package whole wheat linguine
  • 1/2 cup crumbled reduced fat feta cheese

Instructions

Sauté garlic in olive oil in a large deep skillet over medium-high heat 1 minute. Add tomatoes and next 3 ingredients; cook 2 minutes or until spinach wilts. Remove from heat.

Cook pasta in a large Dutch oven according to package directions; drain. Add pasta to tomato mixture. Sprinkle with cheese. Serve immediately.
