Serve this chewy, high-fiber treat over low-fat yogurt for a
delicious breakfast. Look for the dried fruit in the nuts and raisins aisle of
your supermarket.
Makes about 12 servings
Ingredients
- 2 ¾ cups rolled oats
- 1 cup chopped walnuts
- ½ cup dried blueberries
- ½ cup chopped dried apricot
- ½ cup dried cherries
- ½ cup honey
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
Instructions
Stir together oats and next 4 ingredients in a large bowl.
Stir together honey, butter, and vanilla extract. Drizzle over oat mixture, stirring to coat. Spoon oats mixture into an aluminum foil-lined baking sheet coated with cooking spray, spreading mixture evenly.
Bake at 350° for 20 to 25 minutes, stirring after 15 minutes for even browning. Let stand 5 minutes.
