easy couscous recipe: Bring 1 3/4 cups low sodium chicken or vegetable broth to a boil. Stir in 1 cup couscous. Cover and turn off heat. Let stand 15 minutes;
fluff with a fork. Stir in chopped fresh cilantro, mint, or parsley. Soak
wooden skewers in warm water one hour before threading meat to avoid burning
skewers.

Ingredients
- 1 pound unpeeled large fresh shrimp
- ¼ cup fresh lime juice (about 2 large limes)
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced
- ¼ teaspoon kosher salt
- ¼ teaspoon ground cayenne pepper
Instructions
Peel shrimp, leaving tails on, if desired. Place in a shallow dish.
Stir together lime juice and next 4 ingredients. Pour over shrimp; tossing to coat thoroughly. Thread shrimp onto wooden skewers.
Grill shrimp over medium-high heat 1 minute on each side or just until shrimp turn pink. Serve with Lime Cream.
Lime Cream Ingredients
- 1/2 cup Greek yogurt
- 1 teaspoon grated lime rind
- 1 tablespoon fresh lime juice
- ¼ teaspoon salt
- 1/8 teaspoon ground red pepper
Stir together all ingredients. Serve with Grilled Shrimp.
