Greek yogurt has a similar consistency to sour cream but
contains more protein and less fat. If you can’t find apple pie spice, use
ground cinnamon.
Makes 4 servings
Ingredients
1 1/2 cups fat-free milk
1 cup unsweetened apple juice or cider
½ cup steel cut oats
1/8 teaspoon kosher salt
½ Fuji or Braeburn apple, peeled and chopped
¼ teaspoon apple pie spice
½ cup fat-free vanilla Greek yogurt
Instructions
Bring milk and juice to a boil over medium-high heat in a medium saucepan. Stir in oats and salt; reduce heat to medium. Stir in apple and cinnamon. Cook 20 minutes or until oats and apples are tender, stirring occasionally. Top with yogurt.
