Pacific Grilled Salmon Recipe

Fresh salmon fillets.Salmon is a wonderful fish to add to your diet. Naturally low in saturated fat and calories, it is high in protein and omega-3 fatty acids. By grilling the fillets you add a nice smoky flavor without adding any fat or calories.

Serves 4

Ingredients

1/2 cup light brown sugar
1/4 cup honey or maple syrup
2 tablespoons apple cider vinegar
4 (1-inch-thick) salmon fillets
1 cup wood smoking chips (hickory, maple), soaked

Instructions

Combine first 3 ingredients in a small saucepan and bring to a boil; reduce heat and simmer, stirring constantly, until sugar dissolves. Remove and cool to room temperature. Brush 1/3 of mixture onto salmon and let stand 30 minutes.

Prepare grill for medium direct heat. If using a charcoal grill, sprinkle soaked wood chips directly on coals and place grill grate over coals. If using gas, place wood chips on a piece of foil and place on top of burners.

Grill salmon, covered with grill lid, 7 to 8 minutes or to desired temperature. Baste occasionally with reserved sauce. Remove and let stand 5 minutes before serving.
