Rice Pilaf

Brown Rice Pilaf

Makes 8 servings


  • Vegetable cooking spray
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1 cup long grain brown rice
  • 1 cup dry white wine
  • 2½ cups vegetable stock, heated


Preheat oven to 350 degrees. Spray a large oven-proof saucepan or skillet with a tight-fitting lid with cooking spray and set over medium-high heat. Add onion and cook until translucent, about 3 minutes.

Stir in garlic and cook 30 seconds. Add rice and stir for 1 minute to partially toast. Add wine and cook, stirring occasionally, until absorbed, about 2 minutes.

Add stock and bring to a boil. Cover and place in oven until rice is tender, about 50 minutes.
