Ingredients
- 1¼ cups whole wheat flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup 1% milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- vegetable cooking spray
Instructions
Whisk together first 4 ingredients in a large bowl. In a small bowl, whisk together milk, egg, and vanilla. Gently stir into flour mixture just until moistened. Add blueberries and stir to combine.
Heat a large skillet or griddle sprayed with cooking spray over medium heat. Pour ¼ cup of batter into the pan for each pancake. Cook until bubbly, about 2 minutes. Flip and continue cooking until golden brown, about 1 minute.
Serve immediately.
