The almond butter and cream cheese give this rich and creamy dessert a double dose of calcium. Almond butter has no cholesterol and is lower in fat and higher in protein than peanut butter.
24 chocolate wafers
8 martini glasses
1 (8-ounce) package reduced-fat cream cheese, softened
3/4 cup creamy almond butter, preferably unsalted
1/2 cup sugar
1/2 cup whipping cream
1/4 teaspoon almond extract
1 cup semi-sweet chocolate chips
1/2 whipping cream
chopped toasted almonds
8 chocolate wafers
Break 3 chocolate wafers in half, and place the 6 halves in a martini glass around outside edge. Repeat with remaining chocolate wafers and martini glasses.
Beat cream cheese and almond butter at medium speed with an electric mixer until combined. Add sugar and beat until fluffy.
In a separate bowl, whip cream and almond extract until soft peaks form. Gently fold cream into almond-butter mixture, just until combined. Spoon mixture evenly into prepared martini glasses. Refrigerate until ready to serve.
Combine chocolate chips and cream in a microwave-safe glass-measuring cup; microwave on high, 30 seconds, and stir until smooth. Drizzle chocolate over mousse. Break chocolate wafers in half, and insert 2 halves into the top of each mousse; sprinkle with chopped almonds.
